A Northern Irish take on Stilton. Made to an old stilton recipe, using raw milk from luscious pastures that create a very full-tasting blue. It's blueing - like stilton - develops late in the process, meaning there's a great prominence of it. As with the best blues, it's equal parts fruity and spicy.
