This is a cheese with a story. The last raw milk Stilton ceased production in 1988 and - in 2006 - Joe Schneider decided to try and create what a raw milk Stilton would have tasted like.
Having been prevented from using the Stilton name because of its PDO (Protected designation of origin), they eventually landed on Stichelton, which is taken from the original Anglo Saxon name for the town of Stilton. Original cheese, original name, a very complex and delicious cheese.
