A very special matured version of Brightwell Ash. During the maturation, the soft, thin rinded Brightwell transforms completely, losing it youthful moistness and developing a thicker, meatier rind. The final cheese is peppery but supremely well-balanced, so is for the true goat’s cheese aficionado.
