Organic Chianti Classico from vineyards near Panzano, on south-west-facing, stony slopes at around 400 metres. Fermented in raw concrete and aged for a year in concrete and large Slavonian oak casks, it offers a floral nose of red cherry, blackberry and gentle spice. The palate is slim and vertical, with bright, tense acidity, fine tannins, a hint of leather and a savoury, persistent finish. Pair with Parmigiano Reggiano (San Pietro): its salty, crystalline umami meets Sangiovese's acidity head on.
