Stinking Bishop

Stinking Bishop

The legendary Stinking Bishop. Famed for its smell, this delicious cheese is washed in perry, giving it pear notes and a pinkish rind.

Made at Hunts Court Farm in Gloucestershire, Stinking Bishop owes its origin back to when the Cistercian order of monks farmed the same pastures. As with many monastic cheeses, this variety is matured in humid cave-like conditions.

The perry made from the 'Stinking Bishop' variety of pear - hence the name of the cheese. Legend has it that the Stinking Bishop pear was named after a local mid 19th Century farmer called Frederick Bishop. He earned himself the nick-name 'Stinking Bishop' because of his riotous behaviour
