This is a cheese with a story. The last raw milk Stilton ceased production in 1988 and - in 2006 - Joe Schneider decided to resurrect raw milk Stilton.
Having been prevented from using the Stilton name because of its PDO (Protected designation of origin), they eventually landed on Stichelton, which is taken from the original Anglo Saxon name for the town of Stilton. Original cheese, original name, a very complex and delicious cheese.
This product is only available to buy online periodically (usually at Christmas)
