Pivnica Čajkov Intacto

Natural skin-contact white from Marek Uhnák's Pivnica Čajkov in Slovakia, made from Devín, a Traminer crossing, fermented with native yeasts on the skins for up to three weeks, aged in old barrels and bottled unfined and unfiltered with minimal sulphur. Cloves, orange peel, honey and dried flowers lead, with apricot and herbs beneath. Succulent acidity gives backbone to a textured, lightly grippy palate that closes nutty and stony. Pair it with Tunworth, whose rich, cabbagey bloomy rind meets the wine's spice and gentle grip.
