Pedro Ximenex Triana (50cl)

Pedro Ximénez from Bodegas Hidalgo La Gitana, the family house in Sanlúcar de Barrameda, made from sun-dried grapes, fortified and aged through a solera. Mahogany-dark and viscous, it offers raisin, fig, prune and treacle, with molasses, toffee and roasted coffee beneath. The palate is thick, dense and intensely sweet, its concentration carried by a warm, roasted-nut finish of real length. Pair it with Colston Bassett Stilton, whose salty, creamy blue tang is the classic counterweight to such opulent sweetness.
