Organic Monastrell from high-altitude plots across Jumilla, on soils ranging from limestone to sand, with vines of ten to thirty years. A short, cool maceration and six months in concrete, with no oak, keep the emphasis on fruit and freshness. Crunchy red cherry and bramble meet balsamic, garrigue-like herbs and a peppery spice. The palate is medium-bodied and lively, with supple tannins and a bright, sappy finish that belies its Mediterranean warmth. Pair it with Doddington, whose firm, sweet-savoury paste suits the wine's spice and energy.
