Oddbird Blanc de Blancs

An alcohol-free sparkling Blanc de Blancs from the Languedoc, made first as a wine from Chardonnay and Colombard and aged in older oak barriques before the alcohol is removed. The nose shows Granny Smith apple, lime and a touch of honey, with a hint of brioche from its time in wood. Dry, fresh and refined, the palate is carried by fine, creamy bubbles and bright acidity to a clean, elegant finish. Serve it with Dorstone, whose fresh, lemony goat's milk tang matches the wine's crisp citrus lift.
