Niepoort Nat Cool Tinto, Dão (Organic)

Organic Dão red from Niepoort's Nat'Cool project, drawing on Jaen, Alfrocheiro, Baga and Touriga Nacional from old vines, fermented in stainless steel and bottled unfiltered with low sulphur. Strawberry, fresh cherry, dried rose and violet rise from the glass, threaded with spice and herbs. Light-bodied and juicy, it has gentle tannins, bright Atlantic acidity and a clean, mineral finish, and shows best lightly chilled. Pair it with Gorwydd Caerphilly, whose lemony, mushroomy crumble suits the wine's fresh red fruit and soft structure.
