Matt Gregory Fizzy Red 2025

Leicestershire's answer to Lambrusco from Matt Gregory in the Leicestershire Wolds: Pinot Noir and Pinot Gris co-fermented with indigenous yeasts as a red, then bottled to sparkle, unfined, unfiltered and without added sulphur, in a run of just 673 bottles. Gently frothing, it offers dark, bosky, concentrated fruit. Light in body at 11.5%, with fresh acidity, it closes savoury with a pleasing Italianate bitterness. Serve chilled with Sparkenhoe Red Leicester, a fellow Leicestershire native whose sweet, nutty richness is lifted by the bubbles.
