Manzanilla La Gitana NV (50cl)

Manzanilla from Bodegas Hidalgo-La Gitana in Sanlúcar de Barrameda: Palomino Fino from chalky albariza soils, aged five to six years under a thick veil of flor through solera and criaderas. Pale and bright, it shows green almond, salted nuts, chamomile and a clear sea-spray salinity, with crisp apple and dried herbs. Bone dry and light in body, the palate is taut and tangy, finishing long, saline and faintly bitter. Serve well chilled with Cornish Kern, whose nutty, sweet-savoury depth is sharpened by the wine's salinity.
