Klein Constantia Cap Classique Blanc de Blancs

A traditional-method sparkling Chardonnay from one of Constantia's oldest estates, whole-bunch pressed and given extended ageing on its lees. The nose offers green apple, citrus blossom and lime zest over brioche and a hint of stone fruit. On the palate a fine, persistent mousse carries fresh citrus and pastry notes, with bright acidity, a light yet textured frame and a crisp, flinty finish. Serve with Baron Bigod: the wine's acidity and bead cut cleanly through its buttery, mushroomy richness.
