A dry, still Malvasia di Candia Aromatica from the province of Piacenza in Emilia, given 48 hours of cold skin maceration before a cool fermentation and a rest in stainless steel. The nose is expressive: white peach, ripe citrus and orange zest with a subtle balsamic note. The palate is juicy and gently enveloping, with good acidity, clean citrus fruit and a smooth, fresh finish. Pair with Killeen Goat Gouda, whose sweet, nutty richness is lifted by the wine's aromatic zest.
