Highweald Wine Estate Brut Reserve English Sparkling

Traditional-method English sparkling from the Sussex Weald, a Chardonnay-led blend with Pinot Noir and Pinot Meunier, aged 18 months on its lees. The nose offers green apple, lemon zest, pear and toasted brioche. The palate is bright and dry, with a fine, persistent mousse, crisp acidity and a saline citrus edge over light biscuit notes. Light-bodied and precise, finishing long and dry. Pair with Baron Bigod: the wine's acidity and bubbles cut cleanly through the rich, mushroomy bloomy rind.
