Traditional-method Cava from organically farmed Macabeo in Utiel-Requena, given around 60 days of daily lees stirring and a further year of bottle ageing. Ripe orchard fruit and citrus peel open onto dried fruit and a gentle brioche note. The mousse is fine and creamy, the body light to medium, and bright acidity runs through to a fresh, faintly bitter finish that keeps the palate alert. Pour it with Baron Bigod, whose rich, mushroomy bloomy rind is cut cleanly by the bubbles and acidity.
