Domaine Chollet Pouilly-Fume Les Caillottes

Pouilly-Fumé from the Chollet family's organically certified domaine at Pouilly-sur-Loire: Sauvignon Blanc from limestone caillottes soils, fermented with indigenous yeasts and raised in stainless steel. Grapefruit, green apple, white peach and citrus on the nose, with a mineral undertone. The palate is focused and chiselled, with bright acidity, a medium body and a long, stony finish. Pair with Sinodun Hill: its fresh, lemony goat's milk echoes the wine's citrus and chalky tension.
