Rosso di Montalcino from Ciacci Piccolomini d'Aragona: 100% Sangiovese Grosso from marl-rich Eocene soils at 240 to 360 metres, fermented in steel and concrete and aged in large Slavonian oak. Ripe raspberry and blackberry mingle with plum and balsamic notes. The palate balances sweet fruit against lively acidity, with powdery, polished tannins, medium-plus body and a spicy finish of star anise and pink pepper. Pair it with Pecorino with Truffle, whose earthy, savoury sheep's milk flatters Tuscan Sangiovese's acidity and spice.
