Caiaffa Primitivo

Organic Primitivo from Caiaffa in Puglia, certified since 2010, spontaneously fermented and given three months in mixed-size oak. Wild strawberry, dark cherry and ripe red and black berries lift from the glass, with dried violet and a wisp of smoke. Medium-bodied and bright, it has a creamy texture, soft, rounded tannins and fresh acidity, finishing with a flick of black pepper. Try it with Montgomery's Cheddar, whose savoury, brothy depth stands up to the wine's ripe fruit and gentle spice.
