Ancestral-method Glera from the Treviso hills, refermented in bottle on its own lees and left unfiltered, with no added sugar. Bread crust and acacia blossom lead the nose, over green apple, lemon peel and a flash of grapefruit. The bead is gentle and frothy, the palate bone-dry and taut, with a light, savoury yeastiness and a clean citrus finish at a modest 10.5% abv. Serve well chilled, cloudy or clear. Pair it with Gorwydd Caerphilly, whose lemony, mushroomy layers echo the wine's lees and citrus.
