Beaujolais Nouveau from Séléné, Sylvère Trichard's small, biodynamically farmed Gamay estate at Blacé, made by full carbonic maceration with minimal intervention and released within weeks of harvest. The nose bursts with raspberry, strawberry and cherry, a touch of banana and bubblegum typical of carbonic Gamay, and a flick of white pepper. Light-bodied and juicy, it has barely perceptible tannin, lively acidity and a bright, crunchy finish. Serve lightly chilled with Gorwydd Caerphilly, whose lemony, crumbly freshness suits the wine's vivid red fruit.
