Au Pied du Mont Chauve St Aubin 1er Cru 'Le Charmois' Blanc

Premier cru Saint-Aubin from organically farmed Chardonnay, fermented with indigenous yeasts in barrel and aged around a year in French oak, part new, before time on fine lees. Pear, apricot and acacia blossom lead, edged with crushed chalk, hazelnut and a touch of toast. The palate is silky yet taut, citrus-driven acidity and mineral tension framing white-fleshed fruit before a long, savoury, limestone finish. Serve with Comté Marcel Petite 24 Months+, whose nutty, crystalline depth echoes the wine's hazelnut and lees richness.
